How to Cook Red Lobster Shrimp Scampi in 10 Easy Steps

Shrimps are delicious and juicy when properly prepared, especially if you add a twist to the recipe for your preference.

Ingredients
  • 1 lb. of peeled and deveined medium shrimp
  • two tablespoons of finely chopped garlic
  • one 1⁄2 cups white wine
  • one tablespoon pure olive oil
  • one teaspoon Italian seasoning
  • 1⁄2 fresh lemon juice
  • 1⁄2 cup grated parmesan cheese
  • one tablespoon parsley
  • 1⁄2 cup softened butter
Instructions
  1. Season the shrimp with pepper and salt, to taste.

  2. Bring out the large skillet and put on the stove. Add olive oil and heat to medium-high temperature.

  3. Add the shrimps; frequently stir in until its cook, pink and tender and no longer translucent. This is approximately for about 3 minutes.

  4. If the shrimps are already cooked, set them aside.

  5. Add garlic to the skillet; frequently stir until you can smell its fragrance, approximately about 2-3 minutes. Avoid making it brown because it will only make the dish bitter.

  6. Add and stir lemon juice and white wine. Boil then simmer until the wine is reduced to half.

  7. Add other spices like rosemary, oregano, and thyme. Add some Italian seasoning.

  8. Add some butter, but make sure the heat is reduced to low. The butter added should be two tablespoons at a time. Wait until it’s smooth and melty.

  9. Add the shrimp back into the sauce you’re cooking, and then add parsley. Season the sauce with pepper and salt.

What You Should Know About Scampi:

A lot of people are confused about what “scampi” really means. Here’s what, scampi is an Italian name for langoustines, a kind of shellfish initially used in this recipe. When the recipe is adapted by American, Italian-American chefs started using shrimps instead of scampi, because it’s easier to find.

1. Leave the Tails

If you want more flavors to the soup, better leave the tails. We love to keep the tails because of the flavors it adds. However, if you’re not used to slurping your pasta and find tails in the shrimp, you can buy the shrimps with tails already removed so you can proceed with cooking right away.

2. Fresh or Frozen Ones?

The main ingredient in this recipe is shrimps. So you should consider if you’ll buy the fresh ones of frozen ones because then the preparation time would be affected. From our experiences, the “fresh” shrimps in the supermarket have been frozen and thawed.

Although we indicated in this recipe that you should buy the peeled and deveined shrimps, you can still opt for the frozen ones because especially if you want better texture and flavor.

3. Shrimp Size

When we go to the supermarket, shrimps are labeled as small, medium, large and so on. But there’s a better way to know the size you’re getting. The count numbers in each pound which is an average of 1 pound will tell you how many you’re getting.

With larger shrimps, smaller numbers are indicated. But with smaller shrimps, expect it to be many. You can then calculate how many you need for each recipe.

4. Marinating the Shrimps

Marinating or seasoning the shrimps will depend on the ingredients you’re using. For other recipes that use acidic, the approximate time is 30 minutes. If it’s non-acidic like what is mentioned in this recipe, it could be marinated for an hour.
